Valdonica is located in the hills of Maremma – in Southern Tuscany. Grapes and hearts are spoilt by the magic view across rolling hills, the fertile flatlands and the blue sparkling Mediterranean Sea.

Valdonica offers guestrooms into the “Cantina” as well as into the “Villas” – all materials used are biologic and organic and the construction follows the latest low-energy concepts. Small details and precious materials add to the quality of the place.

It is Valdonica´s aim to establish itself as the premium Sangiovese producer in this little known wine producing corner of the Maremma. The perfectly south-facing slopes open spectacular views on the Mediterrean Sea and the island of Giglio.

Hotel Facilities
All newly built by integrating traditional Tuscany architecture with modern design and with leading edge ecological technology – to draw the beauty of nature to the inside, to draw you to the outside.

Every Guestroom has its private garden with deckchairs, tables and sunshades. Roses and lavender enhance the fragrances of nature. Or you might wish to sip a glass of wine, read your favorite book, chat with your fellow guests in the lounge chairs of one of the Terraces: The Forum´s Terrace overlooking our Ouverture Vineyard, the Degustation Terrace overlooking Maremma and the Mediterranean Sea.

On sunny days breakfast is provided on the Forum´s Terrace: In the shade of the Pergola with a view on the vineyards and the endlessness of Maremma. When it gets colder, breakfast is provided on our Forum´s Table in the Cantina, center of Valdonica´s social life: This is where we cook, dine and wine, this is where we reflect, philosophy and discuss… Breakfast ranges from home-made marmelade to ham and cheese from local producers. If it´s your daily muesli or your special brewed coffee – it´s there.

The residence has lots of lounges and terraces overlooking the gardens and hills. There is a private outdoor pool at the property’s historic manor house, a 20-minute walk or 5-minute drive away.

Rooms: There are a total of 8 rooms in the property.

Cantina Rooms:
Double-Room: Those guest-rooms are with adjoining bathroom. Through a glass-door, they open up to the private garden – facing the morning sun.

Master-Room: Those guest-rooms are with adjoining bathroom. Through a glass-door, they open up to the private garden – facing the vineyards and the evening sun.

Suite: Through the entry-room you reach the two double-rooms and the bathroom. Each double-room has access to its private terrace – both terraces are side by side, facing perfectly south
Features

Beds out of 400 years old oak – hand-made in modern design: We found old wine-barrels – taller than humans, thicker than any of today´s barrels: Over the centuries their wood got inflitrated by wine and by its crystallisations. Integrated into finest carpenter-work you feel the touch of bygone quality and spirit of wine.

Healthy floor cooling and heating system: For a balanced and healthy room climate we believe in a cooling/heating system integrated in the floor of your rooms – and traditional shutters to protect your room from sun-light

Minibar, Satellite TV, kettle… and literature: If it´s a cool glass of white wine, your special TV-Show, a cup of tea… you find all of it in your room. From the owners library you find selected books or you might leave a book for coming guests.

Sunbathing, reading, writing on your Private Terrace: Every guest has a private terrace – equipped with table, bench and umbrella… or you might wish to relax in the desk chairs of our Degustation Terrace.

Cooking / Dining & Wining / Living Lounge at the Forum: At the Cantina´s Forum you meet other guests and Valdonica Team Members: One massive table, built from 400 years old oak, is the central get-together place. If you feel for cooking – feel free to use the kitchen: We might ask you for joining into your meal. If you feel for playing the piano – feel free to use our grand piano: We might ask you for listening to your music. Through a glass wall the Forum opens full view into our Bariccaia – where the wines are aging in oak barrels: The Gral of Valdonica.

Villa Rooms:
Villa Double: Those guestrooms are with adjoining toilet and separate private bath. Grand glass-doors open up to the private terrace with a spectacular view across the vineyards to the Mediterranean Sea.

Villa Master-Double: This guestroom is with a canopy-bed, an open Fire-Place and with integrated bathroom-facilities including a handmade stone-sink. Grand glass-doors open towards the private terrace with spectacular view across the vineyards to the Mediterranean Sea – the ultimate of romance!

Villa Valdonica: 2 Double-Rooms and 1 Master-Double including 3 bathrooms/4 toilets, 3 terraces and a Cooking/Dining/Living Lounge with open-fire place and grand sliding glass doors to the outside gardens.

Spectacular Setting: Nestled in the vineyards, surrounded by Oak-Trees, close by the Pond – with a “goddish” view across the hills of Maremma to the Mediterranean Sea with its Island of Giglio. Surrounded by pure nature – without any sign of civilization.

Sleeping in Farmhouse-Coziness: All bedrooms walls and floors are made from solid wood and are built in traditional wooden roof-beam construction including handmade clay tiles – all in organic materials. Well isolated: Keeps you cool in summer and warm in winter . The Master-Room warms with its private Open-Fire Place…

Spacious Cooking / Dining & Wining / Living Lounge: Grand sliding glass doors make inside-outside confluent: This is where you meet your Villa fellow-guest. You might wish to light the Open-Fire Place, cook a meal for your beloved ones or read a book from the Owner´s Library.

Private Terraces for every Bedroom – or you relax around the Kitchen Garden, the Lavender Garden with your fellow guests: Inspirational spots all around for your sunbathing, reading, chatting, writing…

Here meets traditional Handicraft and Ecolocy: Hand-Carpentered kitchen from solid wood – with Miele technology, hand-made Stone-Sink from local Valdonica-Stone in Master-Bedroom, certified Low-Energy Concept throughout the building: Enhancing sun-warming in winter and earth-cooling in the summer.

Our Vision
…to create the best Sangiovese in Maremma – by freeing up nature´s upmost energy for flourishing our grapes and wines to an optimum.

Our Vineyard:
High Altitude Vineyards: Our vineyards stretch up to 1500ft – the highest Sangiovese Vineyards in Maremma
Mediterranean Sea Climate: The closeness of the Sea provides a cooling breeze for the vines – minimizing disease and enabling more sun-hours
Volcanic soil: The volcano of Sassoforte left 20 millions year ago volcanic soil for the vines. Additionally we find typical clay soil as well as sandy soil in our vineyards.
9 Types of Sangiovese: After careful consideration of soil-structure and micro-climate we planted nine types of Sangiovese in separate vinyards.
Biologic & Organic: We planted vines in virgin soil and we take care of them by using solely natural procedures – we are a certified biologic and organic farm. Prunining, weeding, tying…we do it all by hand.

Our Winery:
Manual Harvest: We harvest, according to the grapes readiness- regardless of calendar dates. All harvesting by the hands of Valdonica Team and their families. De-stemming follows immediately after harvesting during night hours.
Small Batch Fermentation: We ferment in buckets, each vineyard location separately. Hand-plunging three times a day keeps us fit.
Maturation in Barrique: All our red wines, partly our white wines mature in oak barrels from mainly French producers. We carefully select the right wood for the right grapes. Barrels are used at a maximum of five years.
Barrel Selection & Bottle Maturation: We carefully follow the wines during maturation to find out the best fit barrels for each of our wines. Once bottled, our wines mature for at least 12 months in bottles before we release them.
Biolocigal & Organic: Fermentation and maturation follow strict biological and organic guidelines. Fermentation initiates spontaneously with natural yeast from Valdonica vineyards. It all happens in our newly built Cantina – with latest ecological technology.

Location
Valdonica is located in the hills of Maremma, in Southern Tuscany, near the ancient village of Sassofortino. The Valdonica is a 30-minute drive from Grosseto and 50 km from the coast of Tuscany.
