Introduction
Renowned french chef Jean Paul Boundoux, now
residing in Argentina, presents a new culinary proposal at the
restaurant he runs at Posada & Bodega Vistalba. It consists of a
varied menu including fresh ingredients which bring out the
natural colors, flavors and aromas of our land. A renewed
country - and mountain - style Bourgogne offers now a simpler,
more rustic and natural cuisine, including less sophisticated
and more regionally authentic dishes, in which natural
ingredients play a leading role. Regional products such as beef,
chivito (kid goat meat), lamb, fish, trout, will be presented in
the most natural possible way.
Chef Boundoux wishes to implement traditional cooking techniques
in his kitchen. Under this new conception, marked by country
traditions, the md oven will be one of his main allies. La
Bourgogne is open to the public only at noon, and exceptionally
in the evening, for special events booked in advance. La
Bourgogne restaurant opened its doors in Mendoza for the first
time at the beginning of 2005, and in the same year was
conferred the best kitchen 2005 award at the Great Wine Capitals
Global Network best wine tourism restaurant award.
Surrounded by mountains and vineyards, La Bourgogne blends its
typical french character with a more regional style, in which
the value of regional products is emphasized in an atmosphere
characterized by refined decor and service and outstanding
quality. The restaurant´s conception of evolutionary cooking
aims at preserving the flavors of our local raw materials, among
which export beef and fresh stand out.
